Pecan Pie as Easy as Pie

Ingredients

Dough
1 1/4 cups all-purpose flour plus a little more to dust
1 tsp sugar
1/4 tsp salt
1/4 lb cold butter or margerine cut into 1/4″ cubes
1/4 cup of very cold water

Filling
1-1/2 cups sugar
1 cup chopped pecans
2 large eggs
1/2 cup butter, melted
2 Tbsp evaporated milk
1 1/2 Tbsp flour
1 tsp vanilla
1/4 tsp salt

Instructions
1. Place flour, sugar and salt into a mixing bowl or food processor and mix until combined.
2. Cut butter into the mixture until it becomes coarse and crumby.
3. Add cold water and mix just until small balls form. Add a little more water if needed until a nice dough forms but do not allow dough to become sticky.
4. Place dough on a clean work surface and form into a smooth ball. Flatten into a circle.
5. Cover with plastic wrap and refrigerate for one hour.

6. Turn the oven on to 375 Faranheit.
7. Place crust into a lightly greased 9″ pie pan. Use fingers to ensure that the entire base and sides of the pan are covered with the dough.
8. Mix all filling ingredients together in a bowl until combined. Pour into the pie crust.
9. Place pan into pre-heated oven and bake for 45 mins.
